Street Corn Ground Beef Bowl 🍠🌽️
I am ALL about spending as little time in the kitchen as possible but still creating well-rounded meals my family enjoys. This meal checked both of those boxes! It took me about 20 minutes and I also cooked in abundance to have leftovers for lunch/dinner the next few days since it reheats nicely. Enjoy!!

Ingredients:
-1lb ground beef
-Taco seasoning
-2 medium sweet potatoes, cubed
-Avocado oil spray, for cooking
-Salt + pepper, to taste
-1 can of corn
-1 jalapeno, finely diced
-2 tablespoons chopped cilantro
-1 avocado, cubed
-Juice of 1 lime
-1⁄2 cup cottage cheese, blended
-3 tablespoons cotija cheese
-1 teaspoon tajin (optional)
-Hot Honey (to drizzle on top, optional & not included in macros)
Instructions:
1. Toss cubed sweet potatoes with avocado oil, salt, & pepper. Roast or air fry at 400 degrees until golden and tender.
2. Brown ground beef with taco seasoning, salt, and pepper.
3. In a separate bowl make salsa by combining corn, jalapeno, cilantro, avocado, lime, cottage cheese, cotija cheese, and tajin.
4. Layer potatoes, beef, and street corn salsa. Finish with a drizzle of hot honey if you’d like!
