...and then I ate this chili.

This is the recipe of the year in our house, and I do not say that lightly. It is warm, hearty, has just the right amount of spice, and the macros are genuinely incredible. 59 grams of protein per serving!!! From chili. A dish I swore I would never love.

Ingredients
- 4 lbs stew meat
- 1 lb ground beef
- 1 lb sausage
- 1 yellow onion, chopped
- 2 tbsp chili powder
- 1 tbsp chili paste
- 1 tbsp cocoa powder
- 1 tbsp smoked paprika
- 1 tbsp cumin
- 2 tbsp white miso paste
- 2 tsp oregano
- 6 cloves of garlic
- 4 cups beef stock
- 1 light beer
Directions
- Brown the stew meat, ground beef, and sausage in a large pan until fully cooked. Set aside.
- In a Dutch oven, cook the chopped onion over medium heat until translucent.
- Add the garlic and all spices and toast for 3 to 4 minutes, stirring frequently so nothing burns.
- Stir in the beef stock and beer, scraping up any bits from the bottom of the pot.
- Add the browned stew meat, ground beef, and sausage to the mixture and stir to combine.
- Reduce heat to low and let simmer for 3 to 4 hours, stirring frequently.
A Few Notes Before You Make It
The cocoa powder and white miso paste might raise an eyebrow, but do not skip them. They are the secret to that deep, rich flavor that makes this chili taste like it has been simmering all day... and because it has, and every minute is worth it.
This chili is also incredible for meal prep. Freeze it in individual portions and reheat whenever you need a high protein meal without any effort. If it lasts that long. 🤭
