Thai Sweet Chili Meatballs

This recipe checks all the boxes for me- high protein, tons of crunch from fresh veggies, and easy to meal prep for the week!

The meatballs are versatile and can easily be utilized with different sauces to change up the flavor profile (BBQ sauce, buffalo sauce, and marinara are other go-to options), but the sweet thai chili in this recipe really ties everything together well.

It's one of those meals that is fresh and satiating without being overly complicated!


Macros: (5 meatballs & 2 tbsp sweet chili sauce) 
370 calories | 36g protein | 13g carbs | 19g fat 


Ingredients:
  • 2lbs ground turkey
  • 2 tsp garlic powder
  • 2 tsp onion powder 
  • 1 tsp black pepper
  • 2 tbsp worcestershire sauce
  • 2 tbsp olive oil
  • 2/3 cup breadcrumbs
  • 2 eggs
  • 2 tbsp thai sweet chili sauce

Instructions:
  1. Add all ingredients into a large bowl and combine well
  2. Once mixed together well, roll into 1 inch balls and place on parchment paper lined baking sheet
  3. Bake at 425 ℉ for 18 to 20 minutes 
  4. Next, broil on high for 2 minutes to brown the tops of the meatballs 
  5. Toss in sauce of choice and enjoy!

 

I love to pair these meatballs with coleslaw by combining 1 cup coleslaw mix, 1/2 tbsp mayo, 1/2 tbsp plain greek yogurt, & 1 tsp apple cider vinegar! Top off your bowl with yummy fresh toppings like mini cucumbers, shredded carrots, pickled red onion, avocado, & everything bagel seasoning!
