If you need a quick breakfast that's ready when you are, these Pumpkin Cheesecake Overnight Oats are one of my favorite meal prep recipes. They're creamy, packed with protein 💪, and taste just like pumpkin cheesecake while helping you stay on track with your nutrition goals.

Macros (1 Serving): 336 calories | 23g or protein | 55g of carbs | 3g of fat | 8g of fiber

Ingredients:

  • 1/3 cup old-fashioned oats
  • 1/4 cup 100% pure pumpkin purée
  • 1/2 cup vanilla non-fat Greek yogurt
  • 1/2 cup fat-free Fairlife milk
  • 1 tbsp sugar-free cheesecake pudding mix
  • 2 tsp ground cinnamon

Instructions:

  1. Add the oats, pumpkin purée, Greek yogurt, Fairlife milk, cheesecake pudding mix, and cinnamon to a mason jar or container with a lid.

  2. Stir well until everything is fully combined.

  3. Cover and refrigerate for at least 4 hours, but overnight is best.

  4. Give the oats a quick stir before serving and enjoy!
