I understand how hard it is to find something to put on their plate that is also appetizing to you and helps you hit your nutritional goals. I’ve been on the hunt + doing some trial and error myself with my own 2 year old and I’m happy to report I have found a couple of successful recipes 🤝

Ultimately, I hope these recipes help because we should not have to cook separate meals for our kids and ourselves. No one has time for that!
Baked Tacos
Ingredients:
● Taco seasoning
● Ground beef
● Tortillas
● Shredded cheese
● Guacamole
● Can include other add-ins for your own (tomatoes, lettuce, greek yogurt in place of sour cream, etc.)
Instructions:
1. Brown beef and add in taco seasoning.
2. Brush olive oil over tortillas and place on baking sheet.
3. Assemble tacos: add ground beef, shredded cheese, and fold.
4. Throw in the oven at 400 degrees for 15 minutes.
5. Serve with some guac or cilantro lime ranch dressing!
Crockpot Cheesy Chicken Pasta
Ingredients:
● 4 chicken breasts
● 1 jar red pasta sauce
● 1 jar alfredo sauce
● S & P
● Garlic powder
● Mozzarella cheese
● Noodles (use protein pasta for added protein!)
Instructions:
1. Add chicken, sauces, and seasonings to the crockpot and cook on high for 3-4hrs.
2. Shred chicken and stir in dry noodles - add a little water if needed
(Side note: if you don’t have a chicken shredder, it’s a GAME CHANGER.

3. Cook on high for another 30-45 minutes (until noodles are cooked)
4. Add cheese and enjoy!
Tater Tot Casserole
Ingredients:
● 1lb ground beef
● 1 chopped onion
● 1/2t of each salt and pepper
● 1t each of cumin and dried cilantro
● 2t chili powder
● 1/4t cayenne
● 1 can corn (drained)
● 1 can Rotel diced tomatoes and green chiles (not drained)
● 1c sour cream (sub plain greek yogurt for more protein)
● 2c shredded colby jack cheese
● Frozen tater tots
● Buffalo Wild Wing’s Southwest Ranch
Instructions:
1. Brown ground beef with a chopped onion in a skillet over medium high heat. Once
browned, drain grease and season with all seasonings listed. Could also use taco
seasoning packet instead.
2. Add canned corn, rotel, sour cream, and 1c shredded cheese. Stir everything together
well, then top with other cup of shredded cheese.
3. Top with tater tots and bake at 400 degrees for about 35 minutes or until tots are
browned to your liking. Could also broil for a few minutes at the end!
4. Drizzle with southwest ranch before serving!
