Homemade Breakfast Bagel Sandwich 🥯🥚🧀
I have recently gone on a deep dive into breads, bagels, and tortillas to find options that have better ingredients with more micronutrients for myself and my family! It can be hard to find those options in the store so I then went on a search to find an easy recipe that can be meal-prepped… I’m happy to report I was SUCCESSFUL and this sandwich hits the spot!
Μacros: 451 calories | 41g protein | 42g carbs | 13g fats | 4g fiber
Ingredients:
-1/3c bread flour
-1t baking powder
-Pinch of salt
-1/3c plain greek yogurt
-Egg whites to use for egg wash
-Everything bagel seasoning
-2 chicken sausage breakfast links (I like the Amylu brand!)
-1 Light Laughing Cow cheese wedge
-1 egg
-1 serving egg whites
-Spinach (chopped)
Instructions:

In a bowl, combine bread flour, baking powder, and salt.

Add in greek yogurt and mix until it’s a dough (it may still be slightly crumbly!).

Roll into a “log” and then form bagel shape.

Use egg whites as egg wash to coat top and center of bagel dough to make it golden and crispy. Sprinkle EBTB seasoning on top.

Cook in air fryer on 350 for about 10 minutes!

While cooking, combine egg + egg whites on stovetop with chopped spinach to cook.

Split sausages and heat.

Spread cheese wedge on split bagel and layer egg mixture, then enjoy!
These can be prepped ahead of time and frozen - perfect to heat up quick and take on the go 🏃
