High Protein Sugar Cookie Fruit Pizza

It's quick, easy, and best of all it won't leave you feeling weighed down after!
The sugar cookie base was inspired by @thesamplan & I doubled her recipe to fit a full sheet pan. All the credit to her for the original!
Macros per serving ((12 servings) without fruit): 127 calories | 7g protein | 25g carbs | 6g fat
Note: Macros will vary depending on the fruit you choose to top your pizza with.
Ingredients
Cookie Base
- 2 cups flour
- 4 scoops birthday cake protein powder (we used 1st Phorm Level 1)
- 1/2 cup low calorie butter, melted
- 1 cup Swerve granulated sweetener
- 2 tbsp cornstarch
- 2 tsp baking powder
- 1/2 tsp almond extract
- 1/2 tsp salt
- 6 to 8 tbsp low calorie milk
Cream Cheese Topping
- 1 block low fat cream cheese
- 1 cup Swerve powdered sweetener
Toppings
- Any fruit you love! Strawberries, blueberries, kiwi, and raspberries all work beautifully.
Directions
- Preheat your oven to 350°F and line a sheet pan with parchment paper.
- In a large bowl, mix together the flour, protein powder, cornstarch, baking powder, and salt until combined.
- Add the melted butter, sweetener, almond extract, and milk one tablespoon at a time, mixing until a soft dough forms. It should hold together without being sticky.
- Press the dough evenly onto the prepared sheet pan, spreading it out to a thin, even layer.
- Bake for about 10 minutes. The cookie base will look slightly underdone when you pull it out. (Trust the process! It firms up as it cools.)
- Allow the cookie base to cool completely before adding the topping. For best results, refrigerate it for 20 to 30 minutes once it reaches room temperature.
- While the base cools, beat together the cream cheese and powdered Swerve until smooth and creamy.
- Spread the cream cheese topping evenly over the cooled cookie base.
- Top with your favorite fruit, slice, and serve!
Tip: This stores well in the refrigerator for up to 3 days. Add the fruit right before serving if you want to keep it looking fresh.
