Easy Pumpkin Cake Cookies with Just 4 Ingredients

This is a recipe my family has been taking to family functions for literal YEARS! The recipe itself is SO easy to make, and 9 times out of 10, I already have all the ingredients at my house. If you need an easy fall treat that doesn't require a ton of time in the kitchen, these pumpkin cake cookies are for you!

When I started tracking macros with my nutrition coach through LJW Core Nutrition, one of my favorite things I learned was that I didn't have to miss out on my favorite foods or recipes. Sometimes, we just have to swap a few ingredients to make them fit a little better into our goals.

That's exactly what I did with this recipe! I swapped in a zero-sugar cake mix and added vanilla protein powder. Those are the only changes I made, and personally, I can't even tell the difference!

Why I love these pumpkin cake cookies:

  •  Only 4 ingredients!

  •  Quick and easy to throw together

  •  A simple way to add protein powder to a favorite treat

  •  Perfect for fall gatherings, family functions, or an easy dessert at home

  •  Easy to pair with other foods to make them your own

My Favorite Ways to Enjoy Them

I love pairing these cookies with a little zero-sugar Cool Whip on top! If I'm feeling like making something a little extra, I'll make a parfait with vanilla Greek yogurt, cinnamon, and chopped pecans.

Both options are SO good, and it's an easy way to switch things up depending on what you're craving.

One of my favorite things about learning to track macros is realizing that working toward your goals doesn't mean you have to give up the foods you love. Sometimes, a few simple swaps are all it takes to make your favorite recipes work for you!
