Ingredients
For the chicken:

2 lbs boneless, skinless chicken thighs

2 tbsp olive oil, divided

2 tsp kosher salt, divided

1 tsp black pepper, divided

2 tsp garlic powder, divided

½ tsp dried mustard

2 tbsp coconut sugar

1 cup Kinder’s Original BBQ Sauce, plus additional for serving
For the potatoes + corn:

6 small potatoes, diced into approximately 1-inch pieces

10 oz frozen corn
-
2 tbsp olive oil
For serving:

1 cup sliced pickles

½ cup pickled red onions

2 cups coleslaw mix

9 tbsp homemade BBQ ranch dressing, approximately 1½ tbsp per serving
Homemade BBQ Ranch Dressing

¾ cup plain nonfat Greek yogurt

¼ cup mayonnaise
-
¼ cup Kinder’s Original BBQ Sauce

¼ cup chicken broth
-
1 tsp apple cider vinegar
-
1½ tsp dried dill
-
1½ tsp dried parsley

1 tsp garlic powder

1 tsp onion powder
Instructions:

Preheat your oven to 425°F. Line two large baking sheets with parchment paper to make cleanup easier.

Prepare the chicken. Remove the chicken thighs from the package and pat them dry with a paper towel. Place them on one of the prepared baking sheets and drizzle with 1 tbsp olive oil.

Make the chicken seasoning. In a small bowl, combine 1 tsp kosher salt, ½ tsp black pepper, 1 tsp garlic powder, 1 tsp onion powder, 1 tsp smoked paprika, ½ tsp dried mustard, and 2 tbsp coconut sugar.

Season the chicken. Sprinkle the seasoning mixture evenly over both sides of the chicken thighs. Use clean hands or tongs to make sure each piece is evenly coated. Allow the chicken to rest for a few minutes while you prepare the potatoes.

Prepare the potatoes. Wash the potatoes and cut them into approximately 1-inch pieces so they cook evenly. Place them in a medium bowl and toss with 1 tbsp olive oil, the remaining 1 tsp kosher salt, ½ tsp black pepper, 1 tsp garlic powder, and 1 tsp onion powder.

Roast the chicken and potatoes. Spread the potatoes in a single layer on the second prepared baking sheet. Place both baking sheets in the oven and bake for approximately 20–22 minutes. The chicken is done when the thickest portion reaches an internal temperature of 165°F. Continue roasting the potatoes if needed until they are fork-tender and lightly browned.

Cook the corn. While the chicken and potatoes are roasting, heat a large skillet over medium-high heat. Add the remaining 1 tbsp olive oil and 10 oz frozen corn. Cook for approximately 6–8 minutes, stirring occasionally, until the corn is heated through and begins to develop a slight char.

Add the BBQ sauce. Once the chicken has reached 165°F, brush or toss the cooked chicken with 1 cup of BBQ sauce until evenly coated. Slice the chicken into bite-sized pieces if desired.

Make the BBQ ranch. Add the Greek yogurt, mayonnaise, BBQ sauce, chicken broth, apple cider vinegar, dill, parsley, garlic powder, and onion powder to a medium bowl. Whisk until completely combined. You can use it immediately, but I love letting it chill in the refrigerator for at least an hour so the flavors have time to come together.

Build your bowls. Divide the roasted potatoes, BBQ chicken, and charred corn evenly among 6 bowls.

Add your toppings. Finish each bowl with coleslaw mix, sliced pickles, pickled red onions, and approximately 1–2 tbsp BBQ ranch dressing. Add another drizzle of BBQ sauce if you like yours extra saucy!
Serving Suggestions
My favorite way to eat this is exactly as pictured—loaded into a big bowl or plate with all the toppings and a drizzle of BBQ ranch. But that's definitely not the only way to serve it.
You can also turn the leftovers into a BBQ chicken wrap with coleslaw and ranch, serve the chicken and toppings over a big bed of greens for a BBQ chicken salad, or pack the components separately for an easy meal-prep lunch.
If you need to stretch the meal for a bigger family, add extra roasted potatoes, corn, a side salad, fresh fruit, or another veggie. And if everyone in your house likes something different, set everything out build-your-own-bowl style and let them go for it.
