One of the reasons I love these Dill Pickle Chicken Tacos so much is because they check all the boxes: quick, packed with protein, family-friendly, and full of flavor. I'll admit, they sound a little strange at first, but if you're a dill pickle lover, trust me on this one. The tanginess from the pickle juice paired with the smoky seasonings creates the perfect combination, especially topped with crunchy romaine, extra pickles, and a drizzle of ranch.

As a busy mom, I'm always looking for meals that don't require a ton of time in the kitchen, and this recipe delivers. If you've already prepped your tortillas and ranch dressing ahead of time, dinner can be on the table in about 15 minutes. Serve it taco-style, over a salad, or in a bowl with roasted potatoes and veggies. Simple ingredients, easy prep, macro-friendly, and absolutely delicious. That's a win in my book!!
